We are thrilled to announce the details for the Cooking Competition 2025, which will showcase the incredible diversity and innovation in Sri Lankan cuisine. This year's competition features both traditional recipes and creative modern interpretations.
Competition Categories
Traditional Category
Participants will prepare authentic Sri Lankan dishes using traditional methods and ingredients:
- Rice & Curry: Traditional rice with multiple curry accompaniments
- String Hoppers & Kottu: Popular breakfast and street food items
- Traditional Sweets: Classic Sri Lankan desserts and confections
- Regional Specialties: Unique dishes from different regions of Sri Lanka
Modern Fusion Category
This new category encourages creative interpretations of traditional dishes:
- Fusion Appetizers: Traditional flavors in modern presentations
- Contemporary Main Courses: Classic dishes with innovative twists
- Modern Desserts: Traditional sweets reimagined
- Healthy Alternatives: Traditional dishes with health-conscious modifications
Judging Criteria
Our expert panel will evaluate dishes based on:
- Taste (40%): Flavor balance, authenticity, and overall deliciousness
- Presentation (25%): Visual appeal and plating creativity
- Technique (20%): Cooking skills and method execution
- Innovation (15%): Creativity and originality (for fusion category)
Meet Our Culinary Judges
Chef Priya Wickramasinghe
Traditional Cuisine Expert
Chef Priya is a renowned expert in traditional Sri Lankan cuisine with over 25 years of experience. She has authored several cookbooks and runs a popular cooking school in Colombo.
Chef Marcus Fernando
Fusion Cuisine Specialist
Chef Marcus is known for his innovative approach to Sri Lankan cuisine, having worked in Michelin-starred restaurants worldwide. He brings a modern perspective to traditional flavors.
Dr. Anjali Perera
Nutritional Expert
Dr. Perera is a nutritionist who specializes in traditional Sri Lankan ingredients and their health benefits. She will evaluate the nutritional value and health aspects of the dishes.
Competition Format
The competition will be held over two days:
Day 1: Traditional Category
- Participants will have 3 hours to prepare their dishes
- All traditional ingredients will be provided
- Judges will evaluate taste, presentation, and technique
Day 2: Modern Fusion Category
- Participants will have 2.5 hours for preparation
- Basic ingredients provided, participants can bring specialty items
- Focus on creativity and innovation
Prizes and Recognition
Winners in each category will receive:
- 1st Place: $500 + Professional Cookware Set + Certificate
- 2nd Place: $300 + Kitchen Tools + Certificate
- 3rd Place: $200 + Spice Collection + Certificate
- People's Choice Award: $150 + Special Recognition
Special Features
This year's competition includes several special features:
- Live Cooking Demonstrations: Master chefs will demonstrate traditional techniques
- Ingredient Education: Learn about traditional Sri Lankan spices and ingredients
- Recipe Sharing: Participants will receive a collection of all competition recipes
- Cultural Storytelling: Each dish will be presented with its cultural significance
How to Participate
Registration is now open for both categories. Participants can enter one or both categories. Early bird registration is available until December 10th, 2024.
